Double-Dip Desserts
`Holiday Nog`
1pkg. (.9oz) Instant Vanilla Pudding
7c low-fat milk
2t vanilla extract
1c evaporated skim milk
*Combine pudding mix, 2c milk and vanilla in a bowl;
mix according to pudding directions.
Pour into a half-gallon container with a tight fitting lid.
Add 3c milk; shake well.
Add evaporated milk and shake.
Add remaining milk; shake well. Chill.
`Cheese Crisps`
1c butter,softened
2c flour
1/2t salt
1/4t cayenne pepper
2c (80z) shredded sharp cheddar cheese
3c crisp rice cereal
* In a mixing bowl, cream the butter til fluffy. Slowly mix in flour, salt & cayenne pepper.
Stir in cheese and cereal.
Shape into 1 1/2″ balls and place on ungreased baking sheets.
Bake at 350* for 15 – 17min. or til lightly browned.
Serve warm or room temp. Make 3 dozen.
`Double Peanut Clusters`
1/2c sugar
1/2c light corn syrup
3/4c creamy peanut butter
1c roasted, blanched peanuts
1c ready to eat, concentrated protein cereal
*Bring sugar and syrup to boil in saucepan over med. low heat,
stir constantly; remove from heat, add peanut butter and blend til smooth.
Quickly mix in remaining ingredients, then drop by teaspoonful onto wax paper,
or cool til easy to handle and shape into 1″ balls.
Let stand in a cool place , don’t refrigerate, til firm.
Store in airtight container. About 80 calories a piece.

Crock-Pot Wednesday
`Apple Butter`
5 1/2lbs apples, peeled and finely chopped
4c sugar
2 – 3t ground cinnamon
1/4t ground cloves
1/4t salt
* Place apples in a slow cooker.
Combine sugar, cinnamon, cloves, and salt;
pour over apples and mix well.
Cover and cook on high for 1 hour.
Reduce heat to low;
cover and cook for 9 – 11 hours or til thickened
and dark brown, stirring occasionally
(stir more frequently as it thickens to prevent sticking).
Uncover and cook on low 1 hour longer.
If desired,stir with a wire whisk til smooth.
Spoon into freezer containers, leaving 1/2″ headspace.
Cover & refrigerate or freeze.

No Bake Oatmeal Cookies
1 stick butter, melted
1/2c cocoa
3c Old Fashioned Oats
1/2c Peanut Butter
2C sugar
1t vanilla
1/2c milk
*Cook butter, cocoa, sugar & milk til bubbles form around sides of pan.
Remove from heat and add oats, peanut butter, and vanilla.
Drop on waxed paper and cool.

Pecan Balls
(makes: 4Dozen)
1c butter, softened
1/2 c powdered sugar
1t vanilla
2 1/4c flour
1/4t salt
3/4c finely chopped pecans
extra powdered sugar
* In a mixing bowl, cream the butter, sugar, and vanilla; mix well.
Combine the flour & salt; add to creamed mixture.
Stir in pecans. Chill.
Roll into 1″ balls and place on ungreased cookie sheets.
Bake at 350* for 10 – 12min.
Roll in powdered sugar while warm. Cool
Roll in sugar again.
